How to judge it before mixing
- Separate compressed strands so they toast evenly.
- Toast until the colour is evenly golden rather than pale in the centre.
- Let the pastry cool completely so residual steam escapes.
- Mix only enough pistachio cream to coat and bind the strands.
Kataifi, kadayif and knafeh

Storage and crunch
