Pistachio Cream for Dubai Chocolate: What to Buy & How to Use It

Pistachio cream, paste and butter are not the same

Labels vary by country, but the practical distinction is sweetness and pistachio concentration. Pistachio paste or butter is usually mostly ground nuts and tastes intensely nutty. Pistachio cream is commonly sweetened and may contain milk, white chocolate or added fats, making it smoother and more dessert-ready.

What works best for Dubai chocolate?

For a filled chocolate bar, the ideal cream should be thick enough to hold kataifi without running, but soft enough to spread. If your pistachio spread is very loose, mix in more toasted kataifi.
