Dubai Chocolate Cheesecake
A showstopping no-bake cheesecake with a crunchy kataifi-pistachio base, a silky chocolate cream cheese filling and a glossy chocolate ganache topping.
Step-by-step instructions
Make the base
Toast kataifi in melted butter until golden. Mix with pistachio cream and press firmly into a lined 20 cm springform tin. Refrigerate 20 minutes.
Prepare the filling
Beat cream cheese with icing sugar and vanilla until smooth. Fold in cooled melted chocolate. Gently fold in whipped double cream in two additions.
Fill the tin
Pour the cheesecake filling over the set base and smooth with a palette knife. Tap the tin gently to remove air bubbles.
Chill overnight
Cover with cling film and refrigerate for at least 6 hours, preferably overnight.
Make the ganache
Heat cream until just simmering. Pour over chopped dark chocolate, wait 1 minute then stir smooth. Cool to a pourable consistency.
Top and serve
Pour ganache over the set cheesecake. Decorate with crushed pistachios and kataifi curls. Slice with a hot knife for clean portions.
